I got this recipe from a post on The Nest and I knew that I had to have this on my labor day menu. It was easy to put together and the taste was amazing. There were very few leftovers, its a keeper! We used it to make tacos but I also think it would make a great topping for chalupas or a filling for enchiladas.
Crockpot Chicken Tacos

- One package Chicken Taco Seasoning packet*
- 4 frozen breasts
- 1 container of HEB fresh pico de gallo**
- 1/4 cup olive oil
- 1/4 cup water
Take taco seasoning packet and cover the bottom of the crockpot. Lay chicken on top of the seasoning. Take container of fresh pico and cover the chicken. Pour olive oil and water over the top of everything. Do not stir. Simmer in crockpot for 4 to 6 hours on low. If you’re home, flip it halfway through, but not necessary. Remove chicken and shred with a fork. Stir back in, mixing everything up, and let cook/simmer for at least 30 more minutes.
*You can use regular taco seasoning packet if you can not find the Chicken one.
**I used mild since I was cooking for guests and did not know how spicy they would want it. Next time, I would use Medium.

hmm..i received this recipe from another board…i was a little concerned with the “tenderness/juiciness” (or lack thereof) by stewing breast meat(or tenders) for so long. ok, i’ll give it a go!

I was worried too about it drying out but it stayed VERY moist and was really juicy. I think the olive oil helps it not dry out. Plus the juices from the pico help keep everything moist and it does end up with a sort of a “sauce” in the end.
I am really wanting to try this!
