I love me some Chipotle. Specifically, the burrito bowls. Since our going out to eat budget has been cut (damn house!), I decided to try and recreate something similar at home.
I had some frozen chicken that needed to get used so I made the famous Crockpot Chicken Taco mix. In the last 30 mins, I shredded the chicken and added a can of rinsed black beans and one cup of frozen corn. I made a quick batch of brown rice (cooked in chicken broth for more flavor). Once the chicken was ready I assembled the bowls. Rice on bottom, topped with chicken, pepper jack cheese, cilantro, avocado and a squeeze of fresh lime.
Winner winner chicken dinner indeed.
